Culinary Guide Shop was engaged to consult for two restaurant concepts for a new Marriott Tribute Portfolio property, The Memphian, in midtown Memphis, TN, managed by MMI Group.

Overview

Analysis / Concept & Menu Development/ Kitchen Setup

  • Worked with MMI operations team to finalize (2) Restaurants within the hotel: a Rooftop Concept and Lobby Bar & Restaurant Concept. 

  • Conducted a Geographical Comp Set analysis on restaurants, bars, coffee shops, and hotels in the area to determine market needs.

  • Menu development for all approved concepts.

  • Consult on kitchen layout and equipment packages.

Implementation

R & D / Recipe Testing / Recipe Database / Sourcing

  • R&D recipes for both concepts; including beverage/bar programs.

  • Provide detailed recipe cost and build sheets for all items.

  • Sourcing for all raw materials and inventory database set up.

  • Record all raw materials and recipes in approved database.

  • Menu pricing guidance.
