Blackberry Farm needed guidance on two fronts:
- How to create a new whole animal butcher program.
- Develop a proprietary line of charcuterie.
Met with President of Blackberry Farm and Salumist (Director of Charcuterie and Butcher Shop) to:
- Determine products they were interested in producing.
- Review drawings and plans of butcher shop and provide guidance on flow of product and equipment
Delivered a product line with recipe cards and procedure for BF.

Worked side by side with the Director of Charcuterie for multiple weeks on developing the skills and insight into curing fermented and whole muscle salumi.
Worked with BF during the launch of the butcher shop.
