Blackberry Farm sought guidance on creating a new butcher program as well as in the development of a proprietary line of charcuterie.

Blackberry Farm needed guidance on two fronts:

  • How to create a new whole animal butcher program.
  • Develop a proprietary line of charcuterie.

Tackle

Met with President of Blackberry Farm and Salumist (Director of Charcuterie and Butcher Shop) to:

  • Determine products they were interested in producing.
  • Review drawings and plans of butcher shop and provide guidance on flow of product and equipment

  • Delivered a product line with recipe cards and procedure for BF.

    • Recipe cards included estimated product cost and labor cost (prep

      time) considerations

  • Worked side by side with the Director of Charcuterie for multiple weeks on developing the skills and insight into curing fermented and whole muscle salumi.

  • Worked with BF during the launch of the butcher shop.
